Nakiri Style 7138
All of my cleavers are available with a traditional 3 Finger handle for those who prefer it. This small 7" cleaver has a solid copper ferrule and a stabilized Redwood burl handle.
Usuba Style 7328
This is one of my fancier kitchen knives. The Usuba is the same as the Nakiri except that the blade is ground and sharpened on only one side. This particular one has a clay tempered blade of 1095, highly polished with a visible temper line (hamon). The handle is made from a burl wood with a slice of turquoise sandwiched in it (not easy to do, by the way). The final touch is the flame blued ferrule.
